A Broccoli Magic Trick: Using Mustard Seed Powder For Maximum Sulfurophane Super Powers

Fun fact: Adding one little ingredient to your broccoli majorly increases the super powers you'll get!

Two things near and dear to my heart: veggies and science. Today we're combining those. ❤️

I have big plans of being the 100 year old lady who is still having dance parties, going for hikes, and carrying all my groceries without help, which means I need to be setting myself up for success and being kind to my body now instead of the "no pain no gain", "I'm way to busy to slow down even though my check engine light is clearly on" approach I tried for a very long time. (Turns out you eventually break when you do that.)

That's why veggies are so cool. Every time you eat a veggie, you are giving your body superpowers to protect you against diseases, decrease inflammation, and to help your body thrive. 💪🏻

🥦 Broccoli is a total rock star when it comes to giving you super powers so you can be the 100 year old out on the dance floor. 💃

But there’s one caveat: cooking it takes away some of its super powers.  **Cue the sad wha wha whaaa trombone sound**

⭐️ Luckily there’s a trick for getting them back: add mustard seed powder! 

Here’s a glimpse of the science if you’re a nerd like me 🤓 

Broccoli contains a compound called glucosinolate glucoraphanin. When chopped or chewed, that compound comes in contact with another enzyme in broccoli called myrosinase and that’s when the magic happens and sulfurophane is formed! 🙌🏻

Sulfurophane is an incredible compound you want in your life because it has impressive anti-inflammatory and cancer fighting benefits. 

The problem is that when you cook broccoli (or buy it frozen) the myrosinase enzyme that’s necessary for creating sulfurophane becomes inactivated so you miss out on some of the awesome benefits.👎

This is why science is so cool. If you add back the missing enzyme, ✨voila✨ sulfurophane appears! Mustard seed powder conveniently has the missing enzyme so when you add a little you help to make broccoli and all of its benefits complete again (you'll get 4 times as much sulfurophane).🙌🏻

Bonus: it tastes really yummy. 

Like raw broccoli? To get all the benefits, chop it (the finer the better) 40-50 minutes before eating for max sulfurophane benefits.
